Healthy Recipes That Freeze Well
Ingredients:
- 2 cups of quinoa
- 1 can of black beans, drained and rinsed
- 1 bell pepper, diced
- 1 cup of corn
- 1 avocado, diced
- 1/4 cup of cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- Cook quinoa according to package instructions and let it cool.
- In a large bowl, combine quinoa, black beans, bell pepper, corn, avocado, and cilantro.
- Add lime juice, salt, and pepper, and toss everything together.
- Divide the mixture into individual containers and freeze for up to 3 months.
- When ready to eat, defrost in the refrigerator overnight and enjoy!

- In a skillet, cook chicken until browned, then set aside.
- In the same skillet, sauté onion and garlic until fragrant.
- Add tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
- Return chicken to the skillet and simmer for 20 minutes.
- Divide into portions, let cool, and freeze for up to 2 months.
- Thaw in the microwave or overnight in the fridge before reheating.
