Easy One-Pot Meals
Recipe Ingredients:
- 1 pound of ground beef
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 can of diced tomatoes
- 1 cup of beef broth
- 1 cup of rice
- Salt and pepper to taste
- 1 cup of shredded cheese
Instructions:
- In a large pot, brown the ground beef over medium heat.
- Add the onion, garlic, and bell pepper, and cook until vegetables are tender.
- Stir in the diced tomatoes, beef broth, and rice. Season with salt and pepper.
- Cover and simmer for 20 minutes, or until rice is cooked through.
- Sprinkle shredded cheese on top before serving.

- 1 cup of corn kernels

Instructions:
- In a large pot, cook the chicken until browned.
- Add the onion and garlic, and cook until softened.
- Stir in the quinoa, black beans, corn, chicken broth, cumin, and chili powder.
- Cover and simmer for 15 minutes, or until quinoa is cooked.
- Serve hot and enjoy!
