Mushroom Risotto
Ingredients:
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 4 cups chicken or vegetable broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 lb mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- In a saucepan, heat the broth and keep it warm over low heat.
- In a separate large skillet, melt butter over medium heat. Add the onion and garlic, cooking until softened.
- Add the rice to the skillet, stirring to coat with the butter mixture.
- Pour in the wine and cook until it is absorbed by the rice.
- Begin adding the warm broth, one ladleful at a time, stirring constantly and waiting for each addition to be absorbed before adding more.
- When the rice is almost cooked, stir in the mushrooms and continue cooking until they are soft.
- Remove the skillet from heat and stir in the Parmesan cheese. Season with salt and pepper.
- Serve the mushroom risotto hot, garnished with fresh parsley.

- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 lb mixed mushrooms, chopped
- 4 cups vegetable broth
- 1 cup dry white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, cooking until translucent.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Stir in the rice, coating it with the oil and vegetables.
- Pour in the wine and cook until it evaporates.
- Begin adding the broth, one ladleful at a time, stirring until absorbed before adding more.
- Once the rice is cooked and creamy, stir in the Parmesan cheese.
- Season with salt and pepper, and serve hot garnished with chopped parsley.
