Mushroom Risotto
Ingredients:
- 1 cup Arborio rice
- 2 cups sliced mushrooms
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- In a saucepan, heat the broth and keep it warm.
- In a separate large skillet, sauté the onions and garlic until translucent.
- Add the rice to the skillet and cook for 1-2 minutes, stirring constantly.
- Pour in the wine and cook until it is absorbed by the rice.
- Add a ladleful of warm broth to the rice, stirring constantly until the liquid is absorbed.
- Continue adding broth in ladlefuls, stirring constantly, until the rice is creamy and al dente.
- Stir in the mushrooms, Parmesan cheese, and butter until well combined.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Creamy Bacon and Mushroom Risotto
Ingredients:
- 1 cup Arborio rice

- Continue adding broth in ladlefuls, stirring constantly, until the rice is creamy and al dente.
- Stir in the mushrooms, Parmesan cheese, and butter until well combined.
- Season with salt and pepper to taste.
- Serve topped with crumbled bacon.
