Roasted Vegetable Lasagna

Ingredients:

Lasagna noodles
Eggplant
Zucchini
Red bell pepper
Onion
Garlic
Tomato sauce
Ricotta cheese
Spinach
Mozzarella cheese
Parmesan cheese
Olive oil
Salt and pepper

Instructions:

Preheat the oven to 375°F.
Slice the eggplant, zucchini, and red bell pepper into thin slices.
Chop the onion and garlic.
In a pan, sauté the onion and garlic in olive oil until softened.
Add the eggplant, zucchini, and red bell pepper and cook until they are tender.
Spread a layer of tomato sauce in the bottom of a baking dish.
Place a layer of lasagna noodles on top of the sauce.
Spread a layer of ricotta cheese, spinach, and the roasted vegetables on top of the noodles.
Repeat the layers until all ingredients are used, finishing with a layer of mozzarella and Parmesan cheeses on top.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let cool slightly before serving.
