Easy Lemon Bars
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup confectioners' sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 2-3 tablespoons fresh lemon juice
- Zest of one lemon
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x9-inch baking pan.
- In a medium bowl, combine 1 cup flour, confectioners' sugar, and softened butter. Press into the bottom of the prepared pan.
- Bake for 15-20 minutes or until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, 2 tablespoons flour, baking powder, lemon juice, and lemon zest.
- Pour the lemon mixture over the hot, baked crust.
- Return to the oven and bake for an additional 20-25 minutes or until set and lightly browned.
- Cool completely before cutting into squares and dusting with confectioners' sugar.
